Purple Ice Cream Sandwiches

We are experiencing a spring heat wave in California.  One thing that always helps me cool down during these instances is a frozen treat.  Enter Ube.  My daughter’s absolutely favorite ice cream, Ube is made from  purple yams and coconut.  Found in most Asian supermarkets,  its rich consistency and bright color take your palate to some tropical island retreat complete with giant fans and shady palm trees (a cabana boy would be nice too).  A great friend who hails from SF gifted me with flat fortune cookies minus the fortunes and thus an exotic spin on a classic treat was born. It’s the perfect blend of sweet, savory and crunch.  Here’s what you do:

Ingredients:

-Ube Ice Cream

-Flat wafer like cookies

Instructions:

-Soften ice cream

-Line a small pan with parchment paper

-Spread ice cream evenly with spoon and knife onto cookies (density is up to you)

-Place in freezer until hard

-Close your eyes, hear the waves, and feel the sand between your toes…
